Living in Madrid this time around, I’ve made a commitment to myself to try everything at least once. Before coming here, I hadn’t acquired tastes for fairly simple things such as goat cheese, caramelized onions and red wine; all of which I now prefer and even go out of my way to acquire.
Madrileños LOVE goat cheese, which is awesome because its one of my new obsessions. They include it in everything from sandwiches to salads to various kinds of tapas. It’s also fairly cheap and always available at the grocery stores.
So today on my way home for lunch, I stopped in a market and impulsively scooped up some goat cheese, figuring I’d combine it with whatever scraps I had left in my kitchen ….
What I came up with was by far the best salad I’ve ever made…. Who knew?
This simple salad took only 5 minutes to throw together (granted I had some pre-boiled leftover pasta)
Goat Cheese and Cashew Salad
- Goat Cheese
- Cherry tomatoes
- Unsalted Cashews
- Vegetable pasta
- Olive oil
Tips: I put the pasta and the goat cheese in the microwave for just about 10 seconds to warm them a bit.
It’s as easy as that!
Living in Spain, with two health conscious Spaniards, really has taught me some of the dos and don’ts of eating healthy. Eating healthy doesn’t mean sacrificing taste, and making both a healthy and delicious meal doesn’t have to be hard or time consuming.
